Hello Everyone! Welcome to the Long and Short Review Wednesday Weekly Blogging Challenge, where bloggers write on a common theme every Wednesday. This is my second year participating. Today’s topic is one meal everyone should try.

I struggled with this one. Then figured the best way to answer it is as the mom going to international night, and tasked with bringing something for others to try. So I’ve always interpreted international night as a cultural thing, and usually brought a Jewish dish, since that, rather than a country, has defined the rituals and cultures in my life. Since its right around Easter and Passover, I am going to share that everyone should try Matza Brie. Its really what you do with the leftover Matza from the Passover holiday. Its simple as it comes.

Ingredients are easy – One piece of Matzah per egg, a touch of milk, salt and pepper. You rinse the matza in water to soften, crush into the egg mix, let it sit in the egg mix for maybe 10 minutes, add a splash of milk, scramble, then a touch of salt and pepper. I only ever really have it around this time of year, because its attached the holiday. But it remains one of my favorite comfort foods.
